Tarts & Truffles is pleased to offer most workshops and several exclusively online courses to share our passions with you, regardless of where in the world you are!
Classes will be hosted via the ZOOM online conferencing tool, which is free to download and easy to use. As with all Tarts & Truffles workshops and experiences, we strive to meet the needs of each individual client or group, so if you would like to discuss any online experience, including one that isn’t quite offered below, please don’t hesitate to send a message! The History of Chocolate
Travel through time and continents with us as we trace the detailed history of chocolate. Learn how this Food of the Gods was used in ancient times, how it was ‘discovered’ by western civilisation, and how we have learned to transform it into the delicacy we consume today. This presentation includes a variety of slides, presentation of authentic materials and examples, and of course time for Q & A at the end.
Duration: 45 minutes - 1 hour.
Participants: 1-40, ages 9 and up recommended.
Cost: Base fee of 75€, for up to 5 participants. 15€ for each additional.
OPTION: For those of you based in Europe, extend your experience by 30-45 minutes and add a guided Chocolate Tasting Workshop! Each participant receives a special tasting kit in advance, containing four grand cru mini-tablettes from different origins, a tasting booklet with space to keep track of your personal notes, and a mini-coffret fo four signature Edwart bonbons.

The Origins of Chocolate
Have you always wondered where chocolate really comes from, and how it makes its magical transformation from a bean on a tree to a delicious treat to delight the senses? Then this class is made for you! Learn the secrets of how cocoa beans become a bar, the techniques of chocolate production and processing, and how to better understand the bars you buy. This presentation includes a variety of slides, presentation of authentic materials and examples, and of course time for Q & A at the end.

Alchimie Chocolate Production Class
Spend an intimate hour with Lisa, live from the professional chocolate lab. In this detailed demonstration, you will learn step by step how to prepare a set of beautifully molded chocolates, and their rich ganache filling. You will also receive a detailed recipe and instruction sheet via email, so that you can create your own chocolates at home and delight your friends and family! As the preparation and working with tempered chocolate can be tricky at home, it’s best to watch and learn first.
Duration: 1 hour.
Participants: 1-30, ages 14 and up recommended.
Cost: Base fee of 100€, for up to 5 participants. 29€ for each additional.
Online Curriculum for Kids
In these unprecedented times, many kids out there are learning from home and craving unique experiences to complement more traditional online curricula. Any of the above classes can be adapted to suit a group of children of any age, or as a private treat for your family. If you would like to set up an online course for a small group, please discuss your ideas and interests with the other families in advance.
Kids’ classes are definitely available as shorter ‘modules’ or a series split over several sessions.
Duration: 30 minutes - 1 hour each.
Participants: 1-12, ages 7 and up recommended.
Cost:
Fees determined on a case-to-case basis., for up to 5 participants/connections.
Worksheets, activities and other educational materials can be created to complement your course! Additional fees may apply.
A bulk discount of 15% may be applicable for larger groups, or for a series of 3 or more sessions.
Logistics
Timing
I am located in Paris, France, which is 6 hours ahead of Eastern Standard Time and 9 hours ahead of the West coast of the United States. This means that, for example, when it is 9am in San Francisco and noon in New York City, it will be 6pm here in Paris. Online classes are generally available between 10am and 8pm Paris time, Monday to Saturday, though some exceptions can be made. Please try to consider the time difference when making your request.
Payment
Payment is generally expected before the event takes place, within 2-3 days of making the reservation, or 48 hours before the event begins, whichever is sooner. However, if we create a recurring class, monthly billing can certainly be organized.
Class/Group sizes
When working online, the sky's the limit! However, with larger groups it’s a bit harder for participants to interact, so a maximum group size of 8-12 is recommended if you’d like to have a chance for everyone to ask questions, etc. I am always happy to do one-on-one zoom classes, or two families in separate houses, which are especially fun for hands-on baking where we are creating the same pastries in parallel.
System requirements/ suggestions
Online workshops will be held via Zoom. Once you have registered, you will receive a link to join the class at the appointed date and time, via the device of your choosing. Thank you in advance for downloading the application before the class begins, so that we may start on time.
Zoom can be accessed through any desktop or laptop computer, tablet or smartphone. It’s suggested that you find a quiet space with strong wifi or physical connection, to avoid interruptions in your image.
Headphones or earbuds are also recommended for the best experience.
